I love to enjoy fresh fish at home but sometimes it can be dry or stink up the house. To avoid dried out fish and a smelly fish odor, I bake it in foil packets.
Foil baking infuses the fish with the flavor while keeping it moist. Odor doesn’t stink up the kitchen because each fish is in a closed packet. This dish can come together in five minutes and be on the dinner table in twenty-five minutes flat!
Add a simple salad, a starch, and viola – dinner is served!
Foil Baked Fish with Spinach and Garlic
Ingredients: olive oil for brushing Any fish fillets 1 per serving (Cod, Haddock, Monk-fish, and Mahi have all worked well in this recipe) The following ingredients are per piece of fish: Foil sheet 12″ x 14″ Fresh baby spinach one generous handful Tomato slices 3-5 Bottled minced garlic 1-2 tsp Balsamic vinegar 1 Tbsp Smoked sea salt and freshly ground pepper
Directions: Preheat oven to 400 degrees For each serving start with a piece of foil, and layer in this order: Brush a thin layer of olive oil on the foil Add a hand full of spinach Place fish on spinach bed Brush a thin layer of olive oil on fish Top with tomato slices, minced garlic, salt & pepper and vinegar Wrap fish securely and place foil packets on a baking sheet Bake in a 400 degree oven for 20 minutes. Thicker fish will take a little longer.
While that is cooking go over to your counter and do some pushups with your hand on the counter. Now you have just boosted with your calorie burn with #NEAT! in no time at all. (Non-exercise Activity Thermogenesis)
