How to Rock Your Game Day Party Food

Buffalo Chicken Burgers…

So we aren’t big “football-party” people. My husband prefers to stay home and actually watch the game. I prefer to stay home and pretend to watch the game while sitting by a fire. We do enjoy making an event out it with our own version of party food. Chicken wings were a part of our younger game day celebrations, but we have long since given up on the mess and grease. These buffalo burgers are moist thanks to the blue cheese and celery leaves. Add more wing sauce according to your taste. We prefer mild to medium heat.  We can always add extra wing sauce on the side.

Recipe (makes 4 burgers)

Ingredients

1                 pound organic ground chicken

3 oz.           blue cheese

3 Tbsp       chopped celery leaves

1 to 3 tbsp buffalo wing sauce.

Directions:

Cut cheese into cubes and then crumble with a fork until is it like little pebbles. Alternatively, use crumbly blue cheese

Mix all ingredients well and form into 4 patties.

Broil 3-5 minutes per side until internal temperature is 150 degrees. Sometimes we plate these on mixed greens salad, dressed with a drizzle of wing sauce or oil and vinegar. Other times we roast veggies and some sweet potato wedges on a sheet pan.

If you prefer a traditional burger experience, wrap your burger in a pita, or a bun with lettuce and tomato or simply in romaine leaves. Smashed avocado with salt pepper and extra wing sauce is a  delicious topping.

Tip: These can be assembled ahead and chilled up to a day ahead.
